
Yes, you read the title right, you can enjoy a fluffy chocolate cake after just 1-minute in the microwave and it's totally Keto-friendly! This recipe is as RedHotKeto as it gets, using healthy whole Keto ingredients and minimizing low-carb sweetener proportions.
For this recipe, we really just wanted to do something a little bit different. We've been eating a lot of Asian inspired dishes lately (which we LOVE), but it felt like time for something new. We're in weight loss mode right now, which means we're trying to keep our carb and calorie counts low. However, and that is a big HOWEVER, from time to time that sweet tooth gets in the way and a mug cake is just what we need to tide us over.
Knowing how much we miss sweet treats, we figured we would share our experience and recipe with you. If you have time to make these mini cakes for yourself, we would love to hear what you thought.
1-Minute RedHotKeto Mug Cake Recipe

We chose to make two mini cakes with this recipe. One in a mug for the 1-minute microwave version, and one in a skillet, which we popped in the toaster oven for 10-minutes. This way, even if you don't have a microwave, you can enjoy chocolatey decadence in mere minutes.

To begin, you need the following ingredients:
2 Tbsp Almond Flour
1 Tbsp Cocoa Powder
1/2 Tsp Baking Powder
2 Tsp Butter
1 Large Egg
Optional : Whipping Cream to Serve (sweetened or unsweetened as you prefer)
1-Minute RedHotKeto Chocolate Mug Cake

Step 1: Place butter into a microwavable mug of your choice and microwave for 15 seconds. Once melted, swirl the butter to evenly coat the sides of the mug. This will keep your cake from sticking.
Step 2: Add egg and monk fruit sweetener to the mug and stir.
Step 3: Add almond flour, cocoa powder and baking powder to the sweet egg mixture and blend all together.
Step 4: Microwave for 1 minute. (Your microwave may have a higher or lower setting than ours, so try 50-seconds, and 10 second increments following, if the cake does not cook through.)
Step 5: Add whipping cream to taste and enjoy!
Red Hot Keto Chocolate Skillet Cake

Step 1: Set the toaster oven to 350F and place the skillet inside to preheat.
Step 2: Mix egg and monk fruit sweetener in a separate bowl.
Step 3: Add almond flour, cocoa powder and baking powder to the bowl and blend well.
Step 4: Put pad of butter into the skillet, and swirl as it melts down to coat the surface of the pan.
Step 5: Pour batter from bowl to pan and place in toaster oven at 350F for 10-minutes.
Step 6: Remove from toaster and cool for 10-minutes, add whipping cream to taste and enjoy!
A Guilt Free Low-Carb Treat on the Go

We found both of these cakes to be soft, fluffy and chocolatey. Honestly, if somebody had served that to us at a birthday party, we would have no idea we were eating Keto cake; it was that good!
Both the mug cake and the skillet cake came out soft and tasty, but the skillet did have a little edge over the mug. All the delicious butter was soaked up into the Keto skillet cake, making it that much more rich and chocolatey.
