To get started on this delectable creation, preheat your oven to 350F and assemble the following ingredients:


CRUST

2 Cups Almond Flour

1 TBSP Lakanto Golden Monk Fruit Sweetener

1/3 Cup Butter


FILLING

1 1/2 Cups Cream Cheese (12oz)

1 1/2 Cups Heavy Cream

3/4 Cup Swerve Confectioners Sweetener

2/3 Cup Cocoa Powder

1 TSP Vanilla


Keto Crust Preparation



Step 1: Cut a piece of parchment paper to line the bottom of a 10" springform pan.


Step 2: Melt butter and combine almond flour, monk fruit sweetener and melted butter. Stir until mixture resembles coarse crumbs.


Step 3: Press coarse crumb mixture into lined pan with spatula, or by hand, until flat.


Step 4: Place pan into oven and bake for 10-12 minutes, or until crust begins to turn golden brown.



Keto Filling Directions



Step 1: In a standing mixer, beat cream cheese until light and fluffy (2-4 minutes)


Step 2: Combine cream, cocoa powder, Swerve sweetener, heavy cream, and cocoa in bowl with cream cheese and mix on medium an additional 1-minute.


Step 3: Switch mixer to high speed for 2-minutes to incorporate air into the filling.


Step 4: In pre-cooked crust, pour filling and level with spatula.


Step 5: Chill for 1-hour minimum (preferably overnight) before serving.
