Keto Pulled Pork In Electric Roaster



Pork shoulder is one of the cheapest cuts in our area. Every so often, it goes on sale for 99 cents/lb and I always buy a couple at that price. My favorite thing to do with this cut is make pulled pork in the oven. It's a simple "set it and forget it" recipe that tastes delicious and will leave you with meals for days.


Pork shoulder can be quite large bone-in. The one I cooked this time weighed 11 lbs. This recipe works for all sizes, whether bone-in, or boneless. The only adjustment is the cooking time.


Roasting Meat In Electric Roaster



We recently got an electric roaster and absolutely love it. It's a big help since it frees up the oven for side dishes. It is self basting since the the lid catches condensation and baste the meat inside. We've done turkey and pork roasts so far, and they are fall off the bone tender and juicy. The steps here are the same for a conventional oven, since it's not so much the roasting time we're concerned with, but the internal temperature of the meat.


Roasted Pork Shoulder Recipe


First we want to prep the pork shoulder. I prefer to keep the skin on and score it so that it bastes the roast during its cook. Score the skin into the fat, but do not cut into the meat.



Next, we want to rub down the pork with a spice blend to give it a flavour boost. Combine the onion powder, paprika, salt, black pepper, garlic powder, and chili flakes in a bowl and stir with a spoon until blended. Rub the mixture over the pork, making sure you get into the grooves in the skin.



Place the roast into the preheated electric roaster on the roasting rack. Roast for approximately 35 minutes per pound, but to ensure the pork pulls apart properly, make sure it reaches an internal temperature of 190 degrees. Rest for 10 minutes and use two forks to shred the meat.


If roasting the meat in an oven, place the pork shoulder in a roasting pan and cover with tinfoil for approximately the first half of the cooking time. Cook the rest of the time uncovered until the internal temperature reaches 190 degrees.


INGREDIENTS


  • 11lb pork shoulder

  • 1 tbsp paprika

  • 1 tbsp chili flakes

  • 1 tbsp salt

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 2 tsp black pepper


INSTRUCTIONS


  1. Preheat electric roaster/oven to 325F.

  2. Score pork skin into the fat but do not cut into the meat.

  3. Combine all spices together in a bowl and stir until blended. Rub spice mixture over the pork, getting into the grooves of the skin.

  4. Place pork into roaster on wire rack. If roasting in an oven, cover with tinfoil and remove approximately halfway through.

  5. Roast for approximately 35 minutes per pound and pull from roaster when internal temperature reaches 190F.

  6. Rest the pork roast for ten minutes and use two forks to shred meat.
