Keto Avocado Fries

A Great Keto Side or Snack

Avocados are are often a staple on low carb and keto diets. They are so versatile and can be used in everything from desserts to fries...and that exactly what’s on the menu today.


If you’re having a bunless burger or maybe a wrap on a keto tortilla, avocado fries are the perfect side. They’re also great on their own as a snack. Avocados are are full of healthy fats and fibre. A true keto superfood.



It’s a fairly simple recipe and quick to make. First, combine the crushed pork rinds, Parmesan cheese, and seasonings in a bowl. Beat the eggs in a separate bowl. Cut your avocados in half and slice into strips about 1cm thick.

I find the best way to crush pork rinds is to put them in a ziploc freezer bag, lay a dish towel over top, and roll over them with a rolling pin. A food processor also works but I find the plastic bag simpler and no need to wash dishes.


For this recipe, You’ll want to choose avocados that are ripe but not too ripe. You still want to be able to handle them without the avocado getting mushy in your hands.



Put a thick coating of oil in a pan, about a 1/4” so the fries can be half submerged. This can be coconut, avocado, or if your diet allows, vegetable oils. Vegetable oil is also the most cost effective.


Dip the avocado slices in the beaten egg, then into the breading mixture and place in the hot oil. Fry on one side until golden, then flip and fry on the other side. Drain on a plate lined with paper towel. The outside should be golden and crispy and the inside creamy.



My favourite condiments for these fries is the sriracha mayo found here. The mayo and avocado are both rich, but the heat from the sriracha and the breading on the fries just go so well together.

INGREDIENTS


  • 1/2 cup crushed pork rinds

  • 3/4 cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 2 tsp paprika

  • 2 tsp oregano

  • 1/2 tsp salt

  • 2 eggs

  • 2 avocados

  • Oil for frying

INSTRUCTIONS


  1. Combine crushed pork rinds, Parmesan cheese, garlic powder, paprika, oregano, and salt in a bowl. Stir until fully mixed.

  2. Beat eggs in a separate bowl.

  3. Fill a pan with oil approximately 1/4” deep and turn heat to medium.

  4. Dip avocado slices, one at a time, into the beaten eggs then into the bowl with the breading mixture. Turn to cover all sides.

  5. Place in hot oil and fry for a few minutes until they begin to turn golden brown. Flip, and fry on the other side.

  6. Drain on a plate lined with paper towel.

*Serving Suggestion: serve with sriracha mayo
